Vegetarian Chili Recipe

We have officially reached my favorite season- winter! That means it is time for enjoying a hearty meal while watching a classic Christmas movie. This homemade chili is perfect for that, or you can serve it at a family get together. Chili is a warm and delicious dish that is perfect for cold weather. I hope you enjoy this!

Ingredients:
2 tbsp olive oil
1 medium red onion
1 large red bell pepper
2 medium carrots, chopped
2 ribs celery, chopped
1/2 tsp salt, divided
4 cloves garlic, minced
2 tbsp chili powder
2 tsp ground cumin
1 1/2 tsp smoked paprika
1 tsp dried oregano
2 14oz. cans diced tomato
2 14oz. cans black beans
1 can pinto beans
2 cups vegetable broth
1 bay leaf
2 tbsp chopped fresh cilantro
1-2 tsp red wine vinegar
Procedure:
In a pot, heat the olive oil over medium heat. Once visibly hot, add the chopped onion, bell pepper, carrot, celery, and 1/4 tsp of the salt. Stir to mix the salt and cook for 7-10 minutes, until the vegetables are tender and the onion is translucent. Once cooked, add the garlic, chili powder, cumin, smoked paprika and oregano. Combine the spices and cook for 1 minute. Add the diced tomatoes with their juices, the drained black and pinto beans, vegetable broth, and the bay leaf. Continue cooking and stir occasionally for 30 minutes, letting the chili maintain a simmer. Remove the chili from the heat. Transfer 1 1/2 cups of the chili into a blender and blend until smooth, for the best texture. Put the blended chili back into the pot. Add the cilantro, vinegar, and salt and mix. Now your delicious chili is ready to be served!
