Arroz Rojo (Red Rice)
We're back to our favorite cuisine, Mexican! We have decided to treat everyone with a delicious arroz rojo made with tomatoes and black beans. This rice is perfect by itself, but you can add it to a wrap with some scrambled eggs for a kick of protein. This recipe might just be on of our best rice recipes yet! I hope you enjoy this as much as I did!
Ingredients:
2 cups of rice (soaked for 30 mins)
1/2 cup diced tomatoes
1 jalapeño pepper
1 clove garlic
1/3 cup cilantro
1/2 onion
1/2 tsp cumin powder
1 can of black beans
3 cups veggie broth
1/2 cup water
1 tbsp vegetable oil
salt and pepper to taste
Procedure:
In a mixer, add the diced tomatoes, jalapeño, garlic, cilantro, and salt. Blend it and set it aside. In a pan, add the vegetable oil and sauté the onion until it turns brown. Add the tomato and cilantro sauce, and add the salt, pepper, and cumin. Add rice and black beans and sauté for 2 minutes. Add the veggie broth and water and cook it for 10 mins on a medium flame. Make sure that the rice is cooked, and if necessary, simmer for more time until the rice is ready. Enjoy!
